Explorateur and Besace

Sometimes we get slightly distressed cheese that tastes great. Snobbier shops might not sell it at all because it is slightly uglier than usual. Personally, I think that ugly cheese has a beauty all its own, especially when it’s cheaper than usual.

This week, we have French Explorateur. Triple cream wonderfulness that tastes fatty like salted butter with a slight brie pungency near the rind. These wheels have not grown the fluffy white mold that they are supposed to which is why they are $9.99/lb rather than $15.99/lb. With the dollar doing so badly, this will be our cheapest soft-ripened cheese while it lasts.

Besace du Berger is a ripened goat cheese similar to Chevrot or Chabichou but covered in ash and shaped like a teardrop (a pear? a big Hershey’s kiss?). French, from Perigord, tangy, big, goaty flavor.
